Protein Waffles!

Yup, you read that correctly. Powell approved waffles that you can eat every day! This tasty breakfast is not only a winner with adults and kids, but it is packed with protein – the perfect way to start every day.

Protein Waffles

Serves 2

Ingredients:
1/2 cup cottage cheese
2 eggs
1/2 cup water
2 teaspoon olive oil
1 teaspoon vanilla extract
1 1/3 cup oatmeal, instant or regular
1 teaspoon baking powder

Instructions:

Put oatmeal and baking powder in food processor or blender and process until powdered.

In a food processor, blend cottage cheese, eggs, water, vanilla, and olive oil until smooth.

Mix the dry and wet ingredients to form a batter.

As the mixture stands it will thicken, and it may be necessary to add more water (a tablespoon at a time), to a get smooth, not lumpy, consistency.

Cook in a waffle iron according to the iron’s specifications. My waffles take about 4 minutes each.

Nutritional Data: 313 Calories, 18g Protein, 29g Carbs, 4g Fiber, 2.5g Sugar, 13.4g Fat

You can also drizzle with honey or sugar free maple syrup. I top mine with 2 tbsp of coconut whipped cream, which adds an additional 60 cal, 5.2g fat, .8 carbs, and .8 protein

  1. I apologize if this has already been asked. I don’t have time to read all of the comments. Are these waffles “mushy”? I made another version of high protein waffles this morning and my kids hates the texture even though I cooked them longer than suggested. Thank you in advance for any advice.

    1. Hi Betti: The nutritional information is for one serving, and this recipes makes two servings. 🙂

    1. Hi Trudi: It depends on the size of your waffle iron. Divide however many waffles you make from this recipe by 2, and you’re good to go!

  4. I love these waffles but I use greek yogurt. I also make pancakes from the batter and add a little water to thin it down & make wraps.

    1. Yes, this recipe could be used for a breakfast on any day or as a high carb meal. Remember, every breakfast is a high carb meal. Enjoy!

    2. Hi Team Powell….how would this be a HC meal or be eaten everyday if there is fat (olive oil & eggs) in it? because that would mean the carb + fat in it would make it a reward meal wouldnt it?. Sorry, you prob get asked this but I do get kinda confused >.< thanks!

    3. Hi Leonie: Since this recipe serves two, the amount of fat in the olive oil and egg yolks really doesn’t count enough to be considered a fat. When you some of the other foods on the list, there is a bit of fat in them too, but not enough to count as a separate fat. I hope that makes sense. 🙂

  5. Hey guys! Is it possible replace cottage cheese with white greek yogurt? I don?t like cheese things… If I could still half cup measure?

    1. You can try it – you might have to adjust the amount needed. You really can’t taste the cottage cheese in this recipe, so maybe try it with the cottage cheese, and if you don’t like it, try the Greek yogurt. Enjoy!
