What’s for Dinner? Garlic Parmesan Chicken

If you?re like me, the last thing you want to do in the summer is spend a lot of time in the kitchen. Here is a simple dinner idea that require minimal ingredients, very little prep time, and it’s also very tasty and healthy. And, totally kid approved! You will seriously love this dish!

Garlic Parmesan Chicken
Makes 8 4-oz servings

What you need:
4 8-oz boneless, skinless chicken breasts
1/2 cup grated Parmesan cheese
1 cup plain non-fat Greek yogurt
1 tsp. garlic powder
1 1/2 tsp. seasoned salt
1/2 tsp. pepper

How to Make Them:

1. Preheat oven to 375 degrees. Spray a baking dish with nonstick cooking spray and arrange the chicken breasts in the dish.
2. Mix the rest of the ingredients together and spread over the chicken breasts.
3. Bake for 45 minutes.

What’s in Them:

For each 4 oz. portion of chicken: 161 calories, 4.5 g fat, 1.1 g carbohydrate, 28.75 g protein

  1. I used 2% greek yogurt instead of fat free and it came out weird. Is the sauce supposed to be creamy because mine was firm consistency.

    1. Yes, it is supposed to be creamy, and definitely not firm. I’d try using the non fat Greek yogurt and see if it works better. ๐Ÿ™‚

  2. I’ve made this recipe for two nights now because tastes sooooo good! I did cut back on the seasoning salt because it tasted really salty to me. I’ve had it for lunch as well. Makes great leftovers and is very moist.

    1. Yes! Yes! I love it and it works and makes it moist. I also use mayo instead yogurt.

  9. This looks so good and easy!I want to try this, but my 2yr old is allergic to Greek yogurt,but can eat regular yogurt would it still work out if I swapped?

    1. Low Carb… essentially it’s Chicken (Protein) Cheese (fat) Greek yogurt (Protein) – and spices.

  11. This is dang tasty. I loved it! I didn’t have greek yogurt (I am not really a fan of it anyway) so I used a little mayo and sour cream. Awesome. I may try it nest time with cottage cheese and see if it turns out the same.. Thanks !!

    1. Most any shake should be. Just remember that you shouldn’t be “living” off of shakes only, they should be part of your meal routine, not your only meals. some shakes are meal replacements and others are meal supplements (still need other calories with it to make it a “meal) so read your labels and as always, check with your doctor.

  15. I’ve been doing this for years, except instead of yogurt, I use a much smaller amount of Hellman’s mayonnaise. Just a thin smear across the top works. Instead of the seasonings, I use a bit of seasoning. Italian, jerk, bbq, whatever sounds good at the moment.

  16. I made this earlier this week……it was SOOOO good! The only thing for me was that it was too salty….next time I’ll just leave it out or cut it back.

  38. I’m very passionate about healthy eating but sometimes its easier to reach for the microwavable junk in my freezer. When I tried this recipe I realized as long as I have chicken and greek yogurt on hand that would no longer be an issue! This was absolutley delicious and one of the easiest things I have ever made!

  61. What is a healthy way to put a little weight on a child that isnt gaining and the doctor says she needs to put on some weight?

    1. I’d work with your doctor on that, but if you increase her foods, do healthy foods that increase her caloric intake. She’d need to eat more calories than what she is burning, but you want healthy foods, not just junk food. See what your doctor recommends for increasing her caloric intake.

  70. All I can say I’ve been over-weight all my life. I feel like a yoyo, all my life my weight has gone up ad down but I can never get to where I want to be. I tried so my diets, exercise program, and some diet pill. Been to doctor after doctor. I think I don’t eat bad but don’t know what’s bad. Right now I’m doing a boot camp twice a week lost inches and some weight but lord know I still want to lose more. So I’m asking for some more help by the grace of God I know I can do this, I just need to proper tools and some help.

    I would like to take the time to thank both of you for inspiration you keep giving (not to mention the good recipes that I have tried on my family like the chicken parmesan) For a while now I have loved to watch the show and always wished I had the will power to do this. But time went on and nothing changed. This last spring my sister and I found my father of 66 years had fallen asleep and never woke back up. Though my father was not an overweight man his lifestyle was not a healthy one and that is what ultimately took him away from us. My heart aches for him everyday, but it has made me rethink about everything you were saying. I was only seeing the change in the looks of the person, not the change in the way they live all together. I want to be here for my children as long as the lords lets me but I will not be able to do this without a change. I have started with just a diet change not for me everyone, I am the cook of the house they eat what I eat, The eight year old is the toughest, but we progress my starting weight is 278 lbs and just by changing eating habits in 2 weeks 12 lbs have disappeared.   84. I liked the blog post about National Video Game Day who knew. I was expecially interest in the stats of women who prefer Wii over other systems. I personally think it is because of Wii Fit that can get you started on a fitness program without leaving the house I personally think it is the best and have wanted one for years. The games areso interactive and keep you moving. If any other prgram would have come up with this first we might prefer them but the Wii was first with this.

  97. I love this recipe! Thanks! for sharing it. I have been on a journey of my own to lose a lot of weight and having a low metabolism was my biggest struggle. I have done so much better and finally under 200lb. I lost about 45 lbs in a year but am continuing to reach my goal. At the moment I am 160lb but being a 5′ person it is still overweight. I hope to reach an ideal weight goal by the end of this year. ๐Ÿ™‚

  98. Would you ever consider helping a person like me..I will be 59 years old in December. I have been battling weight problems all my life, I have lost and found over 1,000 lbs and so sick of this. I have had the lapband surgery and it did not help. If I stay with 3 protein drinks and 1 meal a day, I did very good but got very bored with that. I did watch the show last night and I’ll start trying again and I have to realize I am worth it but just wished I could get the knowledge to get this weight off and keep it off. At first I had no idea that your blended family was “blended.” A picture that Chris posted of him and Marley a while ago on her birthday was so sweet and they looked exactly alike!   121. I love to follow both of you guys. I have been diagnosed with fibromyalgia and have struggled with my weight for years. I really want to loose at least 75 more pounds, but am having trouble. I feel like everyone is giving me their opinion about what diet is best for me. So many people come to you for help and are truly broken inside and you instill a sense of confidence where there had been none, determination & self worth in these people who now cannot imagine their lives without you. I too have struggled with my weight all my life and currently follow Weight Watchers. I know it is not easy, and it’s something you need to follow for the rest of your life. You get out of it, what you put into it. For me, I want to be the best of me that I can get, and 1 short year ago, I couldn’t walk for 10 minutes without becoming tired and short of breath. I am not up to 7 kilometers ( approx. 4.5 Miles) now and am working my way to 10kms. Walking really makes all the difference in how I feel, having Fibromyalgia, and it keeps me flexible and relieves pain. This is a lifelong battle those of us struggling with a weight problem have, and I am so very glad we have you and Heidi Chris! You guys are truly an inspiration!! I would really love a copy of your book, and pray that your contest is open to residents of Canada!! Halifax, Nova Scotia!! Thank you for everything you do Chris Powell.

    I’m on my journey to lose 75 pounds… For me the hardest thing is knowing what to eat. It seems that whenever you turn on the TV whether it be the news or a talk show there’s always a new diet that’s supposed to be the best, or something that we shouldn’t eat and then the next week it’s good for us. It gets very confusing knowing which foods or which plan is the best to follow with all of the conflicting information. I have given up several times because I’ll tell a friend or family member what I’m doing and they will tell me that I shouldn’t the following that plan… I should be doing XYZ.

    I love the posted recipe and I will be definitely trying it. I also need to work on working out but I feel like I should get my eating plan in order first. I absolutely love your show it is so motivational. I have also loved the Facebook posts showing which exercise to do during the commercial breaks…. PS: I have lost 17 pounds so far

  144. I love the whole blog, but I’d have to say the “Family” section is my fave. It is so endearing and refreshing to bear witness to a celebrity couple who keeps it real. For example, your “35 Reasons I Love You” section was great, complete with Chris playing piano for you amongst the toys and baby gated area! You could feel the authenticity through the screen! I looked around my house, scanning the toys, laundry and unfinished dishes and thought to myself, “these guys are my kind of peeps!” I love the show, and maybe I’m a sucker, but both you and Chris seem very “what you see is what you get”.   153. I love your recipes that you post! This is definitely one I am going to try. My family has went from a regular diet to a 99% gluten free diet in the past year. It has helped my family so much. Especially, my daughter who I have always suspected of a gluten sensitivity from birth! I was having thyroid problems and had recently read an article on gluten sensitivity with the thyroid. 2 months into the gluten free lifestyle and my thyroid is correcting itself, I have more energy, and I dropped 40 pounds!   175. Hi! First of all I admire you’re family so much for all that you give of yourselves to enable another person a chance of a life worth living. I have 4 kids, 2 died when they were babies. I have a 26 yr old son and a 16 yr old daughter. I used to pray just to let me live till they graduate. I am 43 yrs old, single mom, and am now on disability. I have been diagnosed with RA, I have arthritis from the injuries of being hit by a truck when I was younger. I am over 500 lbs and I am not living, just still alive. I cry every day wanting a so called normal life. Just a moment without pain. I can’t walk anymore so my daughter has to do without a mother. I can’t go shopping with her, I can’t help her pick out clothes. She goes in to the stores for me by herself and she hates it. We fight constantly about it. Now she is over 200 lbs and feels like she isn’t pretty or good enough to even wear shorts. She is beautiful! I think I am making her like this because how I see myself. I don’t want to ruin her life also. Am I too old to get help? I have always felt bad about myself. I was molested by my older brother, put down constantly for it by my mother, my father told me he didn’t want to meet me, my husband would beat me if I would gain any weight, even when pregnant. So I never remarried after leaving him when I was 20. I have felt love from someone. I know you have to love yourself first and I have even taken classes, passed with honors, on how to value your self worth. But inside I am dead. The only thing that keeps me here is my daughter. But I am ruining her life also. I know I could never be on your show, but I sure could use some of your help. I don’t know what else to do. I don’t want to die!

I have struggled with my weight for the most of my life and even although I have a Gastric Band I still find it very hard as my restriction is still being tweeked. Your recipe blogs help guide me in making healthy choices. Now it is easier to ignore the “bad” food that is kept in the house and choose the “good” food. My diet is where I need the most help, and your food blogs are simple enough to motivate me to cook and delicious enough to keep me sticking to my diet!

Your recipes interest me the most (not that everything else isn’t great, too) because I’ve had to give up gluten and had a hard time finding recipes that are gluten free and easy/realistic to make. This recipe sounds wonderful and the ingredients are going on my shopping list. Can’t wait to try this!!

  316. I would like information on who to know to believe when it comes to nutrition. One hears we need whole grains and then when I went to a talk from a chiropractor, he says it’s a lie and gave reasons why. How are we to know who is right?
