What’s for dinner? White Chicken Chili in the Slow Cooker!

Slow cookers were made for me, I’m pretty sure. It seems like the only way my family can get even close to a gourmet (or even home cooked) meal these days! The Powell 6 Pack is amazing, but they sure keep my time limited :).

Slow cooker to the rescue! Stews, chili, soups, roasts, lean meats…All cooked to perfection in the slow cooker. It helps that there are SO many healthy recipe options using this little appliance too! Here is one of them:

White Chicken Chili
Serves 9 (1 cup servings)

What you’ll need:

4-5  4 oz boneless, skinless chicken breasts, cooked and shredded (leftovers work great, you could also use leftover Thanksgiving turkey)
3   15.5 oz cans great northern beans (rinse and drain to remove extra sodium)
½ cup chopped onion
1  4 oz can chopped green chiles
1 ½ tsp. chili powder
1  14.5 oz can low fat (I prefer 99% fat free), low sodium chicken broth
Plain, non-fat Greek yogurt for garnish

How to make it:

Put everything in your slow cooker (except the yogurt), stir together until well mixed, and cook on low for 6-9 hours. That’s it. Stir a dollop of yogurt into each serving for some extra creamy goodness and enjoy!

    it look so delicious! but I don’t understand that I will cook a chicken with beans 6-9 hours? :O It’s very much.

    1. Yes, that’s correct. You put everything in your slow cooker (except for the non-fat Greek yogurt) and cook for 6-9 hours. Enjoy!

  3. I make a black and white chicken chili, I use ground chicken sometimes, but is better with chicken breast.
    Black and white chili

    4-5 4oz. chicken breasts diced and browned in skillet
    2 cans of black beans drained and rinsed
    1 can of great northern beans drained and rinsed
    1 8 oz. can of diced green chiles
    1/2 med. sweet onion chopped
    1 tsp. diced garlic
    1-2 two boxes of low sodium chicken broth, depends on how much broth you like.
    1Tbs of cumin
    1/4 tsp. of black pepper

    Cook on low for at least 3 hours

  4. Do you need to cook chicken prior to putting it in the crock pot? Won’t it cook plenty during an 8 hour day?

  5. I make chili using ground turkey seasoned with chili spices. Brown turkey, add to deep pot. Chop up 3 sweet peppers, 1/4 red onion and add. Use the medium can diced tomatoes with green peppers, but drain sauce from can before adding tomatoes. Then add two cans chili beans, drain juice from one can and discard. Use juice from other can and all beans. Stir together and heat. If you like it spicier, add seasoning accordingly. Garnish with yogurt.

  6. I use a recipe similar to that but I’m gonna give this one a try it may have less calories.
