What’s for Dinner? Garlic Parmesan Chicken

If you’re like me, the last thing you want to do in the summer is spend a lot of time in the kitchen. Here is a simple dinner idea that require minimal ingredients, very little prep time, and it’s also very tasty and healthy. And, totally kid approved! You will seriously love this dish!

Garlic Parmesan Chicken
Makes 8 4-oz servings

What you need:
4 8-oz boneless, skinless chicken breasts
1/2 cup grated Parmesan cheese
1 cup plain non-fat Greek yogurt
1 tsp. garlic powder
1 1/2 tsp. seasoned salt
1/2 tsp. pepper

How to Make Them:

1. Preheat oven to 375 degrees. Spray a baking dish with nonstick cooking spray and arrange the chicken breasts in the dish.
2. Mix the rest of the ingredients together and spread over the chicken breasts.
3. Bake for 45 minutes.

What’s in Them:

For each 4 oz. portion of chicken: 161 calories, 4.5 g fat, 1.1 g carbohydrate, 28.75 g protein

    I used 2% greek yogurt instead of fat free and it came out weird. Is the sauce supposed to be creamy because mine was firm consistency.

      Yes, it is supposed to be creamy, and definitely not firm. I’d try using the non fat Greek yogurt and see if it works better. 🙂

      Most any shake should be. Just remember that you shouldn’t be “living” off of shakes only, they should be part of your meal routine, not your only meals. some shakes are meal replacements and others are meal supplements (still need other calories with it to make it a “meal) so read your labels and as always, check with your doctor.

    I’ve been doing this for years, except instead of yogurt, I use a much smaller amount of Hellman’s mayonnaise. Just a thin smear across the top works. Instead of the seasonings, I use a bit of seasoning. Italian, jerk, bbq, whatever sounds good at the moment.

      I’d work with your doctor on that, but if you increase her foods, do healthy foods that increase her caloric intake. She’d need to eat more calories than what she is burning, but you want healthy foods, not just junk food. See what your doctor recommends for increasing her caloric intake.

    All I can say I’ve been over-weight all my life. I feel like a yoyo, all my life my weight has gone up ad down but I can never get to where I want to be. I tried so my diets, exercise program, and some diet pill. Been to doctor after doctor. I think I don’t eat bad but don’t know what’s bad. Right now I’m doing a boot camp twice a week lost inches and some weight but lord know I still want to lose more. So I’m asking for some more help by the grace of God I know I can do this, I just need to proper tools and some help.

I like to see that other children will eat healthier options…I am always on the lookout for new or tweaked foods that my kids are familiar with. I know you get thousands of posts, letters etc. Let me start by saying I have a terminal brain disease and live here in the Phoenix area. I have been over weight since the death of my daughter in 1982. I need some help so that I can be as healthy as I can for my family and myself for as long as i am here. I just started the bod-e drinks this last week as well as verve. My son is a brand partner and we had the pleasure of a brief hello with BK in Scottsdale. I have never asked for any help in my life but I find myself reaching out to you and Heidi. I am a patient at the Muhammad Ali Parkinson’s Center and am doing ok. I have Cerebellar Ataxia with probable Multiple System Atrophy. I wear a leg brace on my right leg at times and use walking sticks. Please contact me if you have time to help. Either way God Bless you and your family. P.S, I am 220 lbs. would like to be around 165 lbs. Thanks again.

    Dear Chris and Hiedi:
    I would like to take the time to thank both of you for inspiration you keep giving (not to mention the good recipes that I have tried on my family like the chicken parmesan) For a while now I have loved to watch the show and always wished I had the will power to do this. But time went on and nothing changed. This last spring my sister and I found my father of 66 years had fallen asleep and never woke back up. Though my father was not an overweight man his lifestyle was not a healthy one and that is what ultimately took him away from us. My heart aches for him everyday, but it has made me rethink about everything you were saying. I was only seeing the change in the looks of the person, not the change in the way they live all together. I want to be here for my children as long as the lords lets me but I will not be able to do this without a change. I have started with just a diet change not for me everyone, I am the cook of the house they eat what I eat, The eight year old is the toughest, but we progress my starting weight is 278 lbs and just by changing eating habits in 2 weeks 12 lbs have disappeared. Thank you for being who you are and supportive in all everyone does. Wish me luck for this will be my lifetime.

    I liked the blog post about National Video Game Day who knew. I was expecially interest in the stats of women who prefer Wii over other systems. I personally think it is because of Wii Fit that can get you started on a fitness program without leaving the house I personally think it is the best and have wanted one for years. The games areso interactive and keep you moving. If any other prgram would have come up with this first we might prefer them but the Wii was first with this.

    I love this recipe! Thanks! for sharing it. I have been on a journey of my own to lose a lot of weight and having a low metabolism was my biggest struggle. I have done so much better and finally under 200lb. I lost about 45 lbs in a year but am continuing to reach my goal. At the moment I am 160lb but being a 5′ person it is still overweight. I hope to reach an ideal weight goal by the end of this year. 🙂

    Would you ever consider helping a person like me..I will be 59 years old in December. I have been battling weight problems all my life, I have lost and found over 1,000 lbs and so sick of this. I have had the lapband surgery and it did not help. If I stay with 3 protein drinks and 1 meal a day, I did very good but got very bored with that. I did watch the show last night and I’ll start trying again and I have to realize I am worth it but just wished I could get the knowledge to get this weight off and keep it off. I am the lowest I have ever been 213 but would just love to see 140..I just want to look good and feel comfortable in my own skin. I missed your chance to get your book…but would just love the opportunity to hear your opinion on what I can do and how can I get and keep this weight off.

I go to the gym three to four times a week for an hour at a time. My doctor wants me to lose the weight and I myself know I would feel better if I did.     Chris I think the work that you and Heidi is remarkable! So many people come to you for help and are truly broken inside and you instill a sense of confidence where there had been none, determination & self worth in these people who now cannot imagine their lives without you. I too have struggled with my weight all my life and currently follow Weight Watchers. I know it is not easy, and it’s something you need to follow for the rest of your life. You get out of it, what you put into it. For me, I want to be the best of me that I can get, and 1 short year ago, I couldn’t walk for 10 minutes without becoming tired and short of breath. I am not up to 7 kilometers ( approx. 4.5 Miles) now and am working my way to 10kms. Walking really makes all the difference in how I feel, having Fibromyalgia, and it keeps me flexible and relieves pain. This is a lifelong battle those of us struggling with a weight problem have, and I am so very glad we have you and Heidi Chris! You guys are truly an inspiration!! I would really love a copy of your book, and pray that your contest is open to residents of Canada!! Halifax, Nova Scotia!! Thank you for everything you do Chris Powell.

    Hello from Iowa 🙂
    I’m on my journey to lose 75 pounds… For me the hardest thing is knowing what to eat. It seems that whenever you turn on the TV whether it be the news or a talk show there’s always a new diet that’s supposed to be the best, or something that we shouldn’t eat and then the next week it’s good for us. It gets very confusing knowing which foods or which plan is the best to follow with all of the conflicting information. I have given up several times because I’ll tell a friend or family member what I’m doing and they will tell me that I shouldn’t the following that plan… I should be doing XYZ.

    I love the posted recipe and I will be definitely trying it. I also need to work on working out but I feel like I should get my eating plan in order first. I absolutely love your show it is so motivational. I have also loved the Facebook posts showing which exercise to do during the commercial breaks…. PS: I have lost 17 pounds so far

    I love the whole blog, but I’d have to say the “Family” section is my fave. It is so endearing and refreshing to bear witness to a celebrity couple who keeps it real. For example, your “35 Reasons I Love You” section was great, complete with Chris playing piano for you amongst the toys and baby gated area! You could feel the authenticity through the screen! I looked around my house, scanning the toys, laundry and unfinished dishes and thought to myself, “these guys are my kind of peeps!” I love the show, and maybe I’m a sucker, but both you and Chris seem very “what you see is what you get”. You guys have such a genuine kindness about you. I pray that Hollywood never overtakes you and you guys will forever be a testament of what hard work and love is all about.     I love your recipes that you post! This is definitely one I am going to try. My family has went from a regular diet to a 99% gluten free diet in the past year. It has helped my family so much. Especially, my daughter who I have always suspected of a gluten sensitivity from birth! I was having thyroid problems and had recently read an article on gluten sensitivity with the thyroid. 2 months into the gluten free lifestyle and my thyroid is correcting itself, I have more energy, and I dropped 40 pounds! Of sourse, I exercise too! I am always looking for new ideas. Thank you so much for your posts! Garlic parmesan chicken is on our dinner menu this week!     Hi! First of all I admire you’re family so much for all that you give of yourselves to enable another person a chance of a life worth living. I have 4 kids, 2 died when they were babies. I have a 26 yr old son and a 16 yr old daughter. I used to pray just to let me live till they graduate. I am 43 yrs old, single mom, and am now on disability. I have been diagnosed with RA, I have arthritis from the injuries of being hit by a truck when I was younger. I am over 500 lbs and I am not living, just still alive. I cry every day wanting a so called normal life. Just a moment without pain. I can’t walk anymore so my daughter has to do without a mother. I can’t go shopping with her, I can’t help her pick out clothes. She goes in to the stores for me by herself and she hates it. We fight constantly about it. Now she is over 200 lbs and feels like she isn’t pretty or good enough to even wear shorts. She is beautiful! I think I am making her like this because how I see myself. I don’t want to ruin her life also. Am I too old to get help? I have always felt bad about myself. I was molested by my older brother, put down constantly for it by my mother, my father told me he didn’t want to meet me, my husband would beat me if I would gain any weight, even when pregnant. So I never remarried after leaving him when I was 20. I have felt love from someone. I know you have to love yourself first and I have even taken classes, passed with honors, on how to value your self worth. But inside I am dead. The only thing that keeps me here is my daughter. But I am ruining her life also. I know I could never be on your show, but I sure could use some of your help. I don’t know what else to do. I don’t want to die!

    I love your show Chris and watch it every week! I wish you had maybe a 3 mo. training session for me to tone up, learn to get better and lose about 10 good lbs. I have always had problems with my weight going up and down with thyroid, stomach problems and just had a pacemaker put in last April 3, 2013, so I would have to start at square one; used to exercise all the time and miss it; just need a trainer to push and guide me in the right direction!     I took a look at the food section because I have been working on my meal plan and look forward to new recipes. After looking at the healthier 4th of July BBQ (It is past the day obviously but I love BBQs), I am excited about trying the deviled eggs. I love deviled eggs! I have used Greek yogurt for a lot of other things (ranch dressing, dip with carrots, substitute for ricotta (with Parmesan and mozzarella) in lasagna to name a few) but have never thought to use it with my favorite BBQ side dish.     I love to watch your programmes her in the uk as you are such a true inspiration to all that you meet. I have struggled with my weight for the most of my life and even although I have a Gastric Band I still find it very hard as my restriction is still being tweeked. I would absolutely love a copy of your book as I am desperate for a child of my own and being in my forties I feel that my dream may just be a dream now. I am due due go through another intense course of fertility treatment by the end of Oct this year and I’m not sure if your aware that before you go through it your weight must be 35BMI or below in the UK. I would really love to have this book purely for the reason that I would love to wake up in the morning to the sound of a baby in my room looking for the eternal love I can give.

    I love the daily inspirational quotes that Chris and Heidi’s facebook pages. They mean alot to me, and they even respond to me personally. I can’t tell you how much it helps me. I was about to give up until he told me to just drink water and stay hydrated. Christ sent me a video on the fact that 90% of people are dehydrated and don’t even know it. I was one of those people and have lost 10 lbs. since I have started drinking my gallon a day. Doing it has kick-started my organs to work better. I am so happy about my 10 lb. weight loss. Now I am motivated.

    This looks wonderful. I make a similar parmesan chicken recipe, but with olive oil instead of greek yogurt. I’m looking forward to making it this way – sounds delicious.

    This seems to be quite a bit of seasoning salt though – I will definitely leave that out. Do you not watch sodium or is it because it’s only a 4 oz serving that the amount doesn’t make that big of a difference (436mg)? I am curious because I’ve been watching sodium quite a bit lately, and it seems to be pretty popular to get “no salt added” foods.

    Having said that – this looks like a nice, simple dish. Though…I’d use bone-in chicken breasts because they don’t dry out like boneless, and toss in a squeeze of lemon and some chopped parsley at the end.

    I am new to your blog, loving the fitness and food section and all the recipes, im always looking for new healthy recipes to try to get away from the boring same meals. I myself am needing to loose approx 130lbs and I have tried different diets or life changes, to loose a little and then plataeu. Right now my husband and our oldest daughter are doing Atkins, but I am looking for recipes, recipes and recipes. I love Chris’ show I watch it for ideas and inspiration, I have bad knees that I cant kneel on or can send a sudden jolt if I land or shift my weight wrong, suffering from patella maltracking syndrome, so i watch for something I can do and not injure the knees worse. Sadly I also work over nights 10hr shifts so there is alot of sitting in my line of work, plus I have atleast a two hour drive round trip for work four days a week. But over all i need to loose this weight once and for all. Thank you for what you and Chris do to help so many people. You guys are amazing.

    Your blogs with yummy gluten free recipes. I have been struggling to lose weight for a couple of years now. I am marathon runner, I have always tried to eat healthy but my weight just keeps going in the wrong direction. My Dr.recently discovered I have a hig. antibody count which is causing my normal hormones to fail. He put me on a gluten free diet. I was really depressed thinking of everything I would have to give up. Your recipes have encouraged me and helped me see that gluten free does not have to bland and boring.     I am trying to follow the plan, but cant seem to remember ever thing, if i had the book i could read and read and read till it sank in, i have lost a few pounds and i thank you both. im on a limited income so i cant afford to buy the book, too many ahead of me at the library.Family is what intrested me the most. the way you and chris bring the children in to your ever day life, the way you and chris work together. you both amaze me. and i love you dearly for your caring loving hearts.

    Food. I need a way to cook healthier for my family with foods they will actually enjoy eating. We are doing somewhat better, but have a long way to go. Watching Chris on Extreme Weight Loss has really inspired me to get fit and take better care of myself.
