Christmas Morning Cooking // 1-Minute Breakfast in a Mug

It’s the wee hours of the morning, the kids are anxious to rip off the wrapping paper and find what Santa’s brought them, but you’ve gotta’ grab some breakfast first—so what do you do? Although it may seem tempting to reach for all those Christmas Eve leftover cookies, I have a quick and healthy one-minute solution up my sleeve to save you time…and your waistline.

Seriously, 60 seconds is all it takes to whip up this easy, delicious, and nutritious Christmas morning breakfast! Don’t limit this quick trick to holiday mornings either—it’s the perfect solution to those busy mornings when you feel there’s no time to slow down and prepare a meal. One-Minute Egg Breakfast

Serves one

Ingredients

2 eggs
Diced veggies (I did bell peppers in the video but you can do anything)
1/8 cup shredded cheese
Fat-free cooking spray
Salt + pepper to taste

Directions

  1. Spray the inside of your mug with your cooking spray.
  2. Add your eggs to your mug.
  3. Mix in your veggies, cheese, salt + pepper.
  4. Using a fork, quickly whisk all ingredients together.
  5. Pop the mug in the microwave for 1 minute.
  6. Briefly let cool.
  7. Dig in and enjoy Christmas morning with your family. 🙂

Nutritional information: 203 calories, 14g fat, 2g carbs, 16g protein

  1. Recently I got into using ginger and turmeric to cook with.

    1 or 2 eggs
    Almond milk
    Ground ginger
    Ground turmeric
    Asparagus
    Cilantro
    Parsley

    Though the way I cook it would probably not be Transform approved lol I’m gonna try my recipe this way… but hey, try the eggs with ginger & turmeric … like oh my gosh

    1. Hi Sunshine: The cheese is regular cheese. Heidi will always put reduced, low, or fat free in her recipes if that’s the type of cheese she’s using, so hopefully that helps! Enjoy!

    2. Thanks for the quick response! One more question…from what I remember in Choose to Lose, breakfast is the one meal that is high carb every day regardless of what day you are on with carb cycling. But this meal has no carbs. Can it be used for a carb cycling breakfast or do I need to add carbs? Or is this just a good Free Day breakfast?

    3. Hi Sunshine: You’d need to add some carbs to make it a carb cycling breakfast. It can also be a Free Day breakfast as it is. 🙂
