Best Healthy Dinner Recipes: Quick and Easy

If your New Year’s wish was for just a few more hours in the day or the ability to clone yourself, that may not be so easy, but I can share some tips, tools, and recipes for some balance this year. Being a business owner, and a newly-navigating co-parent of four amazingly active kiddos, it’s incredibly tough to find time to fit in all the things, let alone find enough time to fit in that self-care I always tell you is so important, right?! But this year, I’m focusing on one thing: Balance. For my sanity and for my family’s happiness, I have to learn how to prioritize what’s deserving of my time and learn to be okay with pushing the things that aren’t as important to the next day.

That’s why finding easy dinner meals is key. There’s nothing I want to do LESS than come home after a long, crazy, incredibly busy day of meetings, gym time, driving the kids to and from all their activities, home school, homework, and all the other things that pile up to still have to cook a healthy family dinner. First of all, I’m tired. Second of all, spending hours in the kitchen takes me away from what I really want to be doing: spending time with my kids.

The meals I’m sharing today are my tried-and-true go-to meals that I know will be a hit among every member of my family. Plus, they’re healthy and super easy to make so the kids can join me in the kitchen as I prep and cook, which means even more quality time together.

1. Slow Cooker White Chicken Chili: What better way to whip up a home cooked meal than to throw it in a slow cooker and let it cook itself?! Talk about the ultimate time saver. This White Chicken Chili slow cooker recipe is a favorite in our house, and it’s perfect for a cozy night in watching our favorite holiday movies as a family.

2. Quick and Easy Waffles: Breakfast for dinner? Yes, please! There’s not a member of this family who doesn’t love breakfast and who would eat it for all the meals of the day. These super easy waffles are sure to be a hit, and you can even play around with your toppings to give them a festive feel. And don’t be afraid to add spinach or something green to the mix and call them Grinch Waffles.

3. Moco Loco:This is probably one of the most-cooked meals from The TRANSFORM App. Moco Loco is a personal favorite of mine too! There are five variations of this meal, so you’re sure to find one that pleases even the pickiest eater in your bunch.

4. Ground Turkey Marinara: In the mood for pasta night without having to cook all the pasta? That’s me. My hand is raised. This Ground Turkey Marinara is a healthier version of everyone’s favorite comfort food, plus it’s so easy to whip up and prepare, and it makes the best meal for leftovers. One question I have for you: Do you prefer grated or shredded Parmesan cheese?

There you have it! Four amazingly simple meals to help you save time in the kitchen so you can get back to the thing you really want to be doing: mindlessly scrolling Netflix. KIDDING. This year, I hope we can fill our empty (or half empty) cups with more family time, more of what we love, and less of the things we don’t. If that means cooking elaborate meals doesn’t fit into that cup, that’s ok, and that’s 100% me!
